重祼麥合桃無花果乾包

星期六出完街街,又把握時間整包包.以祼麥粉代替全麥粉,olive oil 代牛油,做了這個差不多40%祼麥成份的重麥包. 今次嘗試以湯種法做包,但是做不到預期的效果,可能是因為祼麥做出來的成品比較紮實,只發了1.5倍,不太鬆軟.

合桃是在家中取回來的,無花果乾是二哥早前買回來的,吃剩兩大棵,切碎它加入麵糰,發覺口感很好,而且像提子般甜,下次一定encore 呢!!
